Since 1974, Gourmet Night has served as the annual black tie culmination of student learning at the Hilton College. To attendees, Gourmet Night is a lavish once-a-year event, a dazzling see-and-be-seen evening of music, dancing and, above all, fine dining. To Hilton College students, Gourmet Night is the opportunity to manage every aspect of a sophisticated banquet for a very discriminating clientele.

Students interview for positions as directors and associate directors of logistics, procurement, kitchen, service, wine and silent auction. A student general manager heads the team. Over a one-year period, they plan, strategize, coordinate and lead a service team of nearly 300 student volunteers. From theme to budget to menu and night-of logistics, our students run the entire show, including a cocktail reception, silent auction, multi-course gourmet dinner and live entertainment. They also continue to raise the bar. Previous event menus featured such delicacies as American caviar served with miniature shrimp and fried lotus root atop a glass of solid ice, and a tawny port mousse pyramid sprayed with chocolate and dusted with edible gold.

For more than three decades, Gourmet Night has showcased the skills and knowledge of those students enrolled in the world’s premier hospitality program. This signature event has also served as a primary fundraiser for Hilton College educational programs and scholarships. There’s no better learning experience for those who aspire to hospitality careers, and no better night out for gourmands than Gourmet Night at the Conrad N. Hilton College.

Our next Gourmet Night is slated for Saturday, April 12, 2008. Individual ticket price is $175 per person. Tables of 10 are $2,000 with company name acknowledged in the program. Tickets will go on sale at the end of January when formal invitations are sent. How Hotel Guests Perceive the Fairness of Differential Room Pricing
When customers perceived hotel revenue management practices to be fair, they are more likely to be satisfied with the hotel and are more likely to return to that hotel in the future. In this survey of 815 people, we examined the effects of three factors on the respondents' assessment of the fairness of hotel rate policies. Those three factors were familiarity with the practice, provision of information about the practice, and the brand class of the hotel. Of those three, we found that familiarity with a pricing practice was far and away the most important factor affecting perceived fairness. The implication is that revenue managers should focus their efforts on increasing guests' familiarity with their pricing practices. (PDF Document)
